- half a diced cucumber
- 2 diced tomatoes
- 1 diced onion
- 1 can of 3/4 or 5 mixed beans
- drizzle of malt vinegar
- salt and pepper to taste
- pinch of herbs is optional
Simply dice the cucumber, tomato onion and mix in a large bowl. Add the can of mixed beans and season to taste (add your chopped herbs now if needed). Cover and refrigerate for at least 2 hours so its all nice and cold and crunchy.
Serve with your favourite protein or eat on its own.
