I mixed up a few different recipes today and came up with an amazing combination! They taste so yummy. I ate 5 before I even took any photos! Even my husband liked them so they are a bit of a hit. Now since this was a bit of a creation I don’t have exact quantities to write down for the recipe but I will give a good guestimate. I would give them a try if you like your protein snacks because I think these really turned out better than many other recipes I have tried.
1/2 a cup of Almond Meal
1 Sachet of Vanilla Juice Plus+ Complete Whole Food Powder
1 Sachet of Chocolate Juice Plus+ Complete Whole FoodPowder
1/2 a cup of unsweetened desiccated Coconut
2 tablespoons of Cacao Powder
1/4 a cup of Almond Milk
1/4 a cup of Tahini
2 tablespoons of runny Coconut Oil
1/2 a cup of Dates
1/4 a cup of dried Cranberries
2 tablespoons of Coconut Syrup
Extra desiccated Coconut to coat
Firstly mix all the dry ingredients of almond meal, Juice Plus+ Complete Powders, desiccated coconut, cacao powder.
Then next, blend up the tahini, dates, cranberries in a blender or Nutribullet until chopped up nicely.
Mix your blended up ingredients into your dry mix and then add your almond milk, coconut oil & coconut syrup. Mix all these ingredients together with clean washed hands until all mixed well. Rinse hands off.
Pour some desiccated coconut onto a plate and make roughly 3cm size rounds (or whatever size you prefer) by rolling a clump of mixture in between the palms of your clean dry hands. Once you have made them to your desired size, roll them in the desiccated coconut to coat thoroughly. Place on a plate or tray lined with baking paper and when done, place them in the fridge or freezer so they form nice solid yummy protein balls ready to eat in a few hours!
